Apple Blackberry Pie

Ingredients

Apple Blackberry Filling

1/2 cup white sugar
3 tablespoons quick-cooking tapioca
1 tsp lemon zest
1/2 tsp cinnamon
1 1/2 lbs Granny Smith Apples - sliced, cored, and peeled
3 cups blackberries (can be straight from frozen)
2 Grocery Store Pie Crusts (make it yourself if you want to)

Oat Topping

2/3 cup marshmallow creme
4 tablespoons melted butter
1/2 cup firmly packed brown sugar
1 tsp cinnamon
1 cup flour
1 cup regular rolled oats

Steps

  1. Pull your pie crusts out of the freezer (if frozen) to defrost a bit
  2. Preheat oven to 375
  3. Combine the ingredients in the Apple Blackberry Filling section, except the fruit. Mix these together
  4. Add the fruit, stir together and let sit for about 15 minutes.
  5. While your filling is resting, stir together your marshmallow creme and butter until smooth.
  6. Add the remaining ingredients from the Oat Topping section to your marshmallow and butter mixture and stir together until a streusel forms.
  7. Break the streusel into small clumps and set aside.
  8. Pour the filling into your pie crusts.
  9. Pat the streusel onto the filling, making sure its all covered. If a little filling sticks out, that's OK too
  10. Cook your pies one at a time in the oven for about 60-75 minutes (until the pie is bubbling). Check after 45 minutes and if the top is getting too dark, cover with foil.
  11. Let cool for about an hour before serving.
